Red, White and Blue Ice Cream Cake

For months Memorial Day has seemed so far away, but the unofficial start to summer is finally here! Celebrate the holiday with foolproof summer-y desserts. For the occasion we made a festive, insanely delicious ice cream cake featuring Fatty Sundays pretzels on top. Whether you’re hosting a backyard BBQ or a potluck dinner by the fire pit, our ice cream cake recipe  has you covered. It’s sure to impress your weekend guests this summer. Red, White and Blue Ice Cream Cake

Ice Cream Cake Recipe Ingredients:

Cocoa Brownie Base (adapted oh so slightly from Smitten Kitchen)
-2 eggs
-5oz salted butter
-1/2 cup of all purpose flour
-3/4 cup of good quality cocoa
-1/2 cup brown sugar
-3/4 cup white sugar
-1 tsp of vanilla extract

Ice Cream Layers
-1 cup of fresh or frozen raspberries
-1/2 of peanut butter
-1/4 cup of honey
-1.75 quart tub of good vanilla ice cream
-1.75 quart tub of good chocolate ice cream

Ice Cream Cake Recipe Directions:

To make the brownie:
-Preheat your oven to 325 degrees. In a saucepan, melt the butter, sugar and cocoa together with a dash of salt. Remove from the heat and allow to cool. Beat the eggs in with a wooden spoon, until the gritty mixture becomes smoother and more glossy. Stir in the vanilla, then fold in the flour. Bake in a springform pan for 25 minutes - you’re looking to slightly under-bake, rather than over-bake, in order to keep it fudge-y when frozen. Allow to cool completely. Remove from the pan and re-line with cling wrap. Place brownie back in the pan.

To make the remaining layers:
-Next, combine the peanut butter and honey together in a bowl. Fold the peanut butter mixture and the raspberries through the softened vanilla ice cream, so that ribbons of the peanut butter remain. Spread over the brownie base and freeze for an hour, until firm.
-Turn the chocolate ice cream out into a bowl and stir to soften. Spread over the firm vanilla layer and cover with cling wrap. Place back in the freezer until firm, then remove cling wrap.
-Garnish with whipped cream, sprinkles and crushed Fatty Sundays pretzels. We decorated the ice cream cake with festive, custom-colored red, white and blue sprinkle pretzels.
