We're all about anything pumpkin this time of year. Who's with us?! We tasked our mom with pumpkin dessert recipe development, and she came up with the most amazing dessert: pumpkin loaf with chocolate chips, rainbow sprinkles, and Fatty Sundays sprinkle pretzel bites. This dessert is super easy to make, and so yummy! You'll wow adults and kids alike with this treat during the holiday season.
Pumpkin Loaf with Pretzel Bites Ingredients:
1 3/4 C. flour
1 1/2 tsp. pumpkin pie spice
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1/4 tbl. unsalted butter
1 1/4 C. sugar
3 eggs
1 C. canned pumpkin
1 tsp. vanilla
1/3 C. milk (whole or low fat, not skim)
3/4 C. mini (or regular) chocolate chips
Fatty Sundays Sprinkle Pretzel Bites
Pumpkin Loaf with Pretzel Bites Recipe Directions:
1. Preheat oven 350 degrees
2. Butter and flour a 9x5 metal loaf pan
3. Sift first five ingredients into medium bowl
4. In large bowl, beat butter
5. Gradually beat in sugar, then eggs, one at a time
6. Beat in pumpkin and vanilla
7. Beat dry ingredients into pumpkin mixture alternately with milk
8. Stir in chips and Fatty Sundays pretzel bites
9. Bake about 55 minutes (check for doneness with cake tester)
10. Cool in pan on rack 15 minutes, then turn out onto rack to cool
